We care deeply about the ingredients that we use and over 60% of our ingredients are locally source. They make everything from scratch from the brown sugar to all the pastries and breads. All their seasonal pastries are made with seasonal fruits that they locally source. They also sell the flour they use for the baked goods and have wheat berries available if customers wish to purchase them and grind their own flour. All their flours are organic, and they don't use any seed oils.
